{"id":6100,"date":"2025-12-03T21:09:28","date_gmt":"2025-12-03T19:09:28","guid":{"rendered":"https:\/\/newbalkancuisine.com\/?p=6100"},"modified":"2025-12-03T21:17:20","modified_gmt":"2025-12-03T19:17:20","slug":"dragoljub","status":"publish","type":"post","link":"https:\/\/newbalkancuisine.com\/en\/dragoljub\/","title":{"rendered":"Dragoljub New Balkan Cuisine - the new face of \"kafana\""},"content":{"rendered":"<p><strong>DRAGOLJUB \u2013 THE NEW FACE OF \u201cKAFANA\u201d FOOD IN BELGRADE<\/strong><\/p>\n<p>In the place where the first disco in Belgrade used to work, right next to theater \u201cAtelje 212\u201d and cultural centre \u201cDom Jevrem Gruji\u0107\u201d, Dragoljub has moved in &#8211; a restaurant that celebrates the tavern (kafana in Serbian) as an institution.<\/p>\n<p>The creator \u00a0Vanja Pu\u0161kar, chef and owner is the author of the gastronomic trend New Balkan Cuisine, known for translating the classic motifs of Balkan cuisine into a new language of taste and form.<\/p>\n<p>&#8220;<em>The idea of \u200b\u200ba tavern has been around for a long time, and now it has its own home. We wanted it to be tied to a location that has cultural and hospitality weight, and this space carries exactly that<\/em>,&#8221; says Puskar.<\/p>\n<p>Dragoljub is a place where the tradition of the kafana meets a modern approach to food and ambience. Guests have at their disposal a quiet garden, an intimate floor for smaller gatherings and the lower level, where the cocktail &amp; snack concept created together with Vladimir Simi\u0107, founder of the Bartenders710 School, starts at 5 p.m. That&#8217;s when the restaurant enters its evening transformation &#8211; gastronomy becomes a ritual.<\/p>\n<p>The menu includes dishes that are reminiscent of well-known kafana classics, but created through a contemporary prism:<\/p>\n<p>For starters examples:<\/p>\n<ul>\n<li>baked cheese from \u201cRanilovi\u0107\u201c farm, Belgrade honey, caramelized walnut, dried strawberries, lemon balm<\/li>\n<li>Buckwheat rolls, MadMed honey, caramelized walnut, lemon balm<\/li>\n<li>Prunes with goat&#8217;s cheese, mangalica lard, shredded cracklings,<\/li>\n<li>bacon powder, lemon balm gel<\/li>\n<\/ul>\n<p>Main dishes are homage to the tavern \u2013 examples:<\/p>\n<ul>\n<li>Meat patty with djubek cheese<\/li>\n<li>Beef loin wrapped in lamb suet, mashed potatoes with mustard seed, reduced bone broth, kaymak<\/li>\n<li>Sweetbreads on butter, barley cream with leeks, meat glaze, toasted hazelnuts<\/li>\n<\/ul>\n<p>In the non-meat section, there are:<\/p>\n<ul>\n<li>Lion&#8217;s mane, parsnip cream, parsnip chips, umami glaze<\/li>\n<li>Kale, pumpkin seeds, miso, dumpling<\/li>\n<\/ul>\n<p>Desserts:<\/p>\n<ul>\n<li>Cr\u00eapes in wine sabayon (for 2 people)<\/li>\n<li>Cake with prunes, salted caramel, kaymak, pear compote<\/li>\n<li>Lemon cream, pomegranate, lemon balm, crispy crumbs<\/li>\n<\/ul>\n<p>The bar menu offers snacks that follow the rhythm of the evening: mangalica lardo, toasted bread with bone marrow butter, Penis chips with lemon &amp; lemon balm aioli, Waffle &amp; sweetbreads<\/p>\n<p>All this is accompanied by a carefully selected list of wines, brandies and cocktails that celebrate local producers and local ingredients.<\/p>\n<p>In the heart of Belgrade, between the theater and the museum, Dragoljub is a place where food, drink and conversation merge into a common experience and become part of the city&#8217;s story.<\/p>\n<p><a href=\"https:\/\/newbalkancuisine.com\/en\/dragoljub-new-balkan-cuisine-restoran\/\" target=\"_blank\" rel=\"noopener\">RESERVATION<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>DRAGOLJUB \u2013 THE NEW FACE OF \u201cKAFANA\u201d FOOD IN BELGRADE In the place where the first disco in Belgrade used to work, right next to theater \u201cAtelje 212\u201d and cultural centre \u201cDom Jevrem Gruji\u0107\u201d, Dragoljub has moved in &#8211; a restaurant that celebrates the tavern (kafana in Serbian) as an institution.
