VID NEW BALKAN CUISINE – A New Chapter of New Balkan Cuisine
In the first week of December, on Friday, December 5th, Vid New Balkan Cuisine opens its doors — a restaurant that will also serve as the development center of the NBC concept. Food here is an invitation to gather, to create communication and connections around the table, in a relaxed and unpretentious way. The main focus is on a sharing-format set menu, a contemporary interpretation of the sofra, where dishes are discovered together.
“New Balkan Cuisine enters a new phase in 2026, and Vid is where this journey begins. This will be our most playful format so far — more flexible in form and tempo, creating an experience that changes, evolves, and grows along with our concept. The atmosphere is effortless, light, and alive — exactly the kind we personally enjoy the most,” says Vanja Puškar, chef and creator of the NBC concept.
New Balkan Cuisine understands fine dining as a true pleasure in ingredients and the moment at the table, within an atmosphere that remains natural and unobtrusive. The set menu unfolds in five acts, opening with a palette of small bites that announces the rest of the menu, its seasonality, and its style. The feast begins with warm starters — a New Balkan Cuisine interpretation of the sofra, centered on sharing and tasting together.
The restaurant opens on Friday, December 5th, near Slavija Square and the Church of Saint Sava, in the atrium of an office building at 14 Svetog Save Street. The restaurant features a spacious garden as well as an indoor dining area with seating for over 30 guests.
During the first week, Vid will be open for dinner service only, from 5 PM, as an introduction to the new format. After this initial period, an à la carte lunch menu will be introduced alongside the set menu. Regular working hours will be from 8 AM to midnight, and on Fridays and Saturdays until 1 AM.
