Vanja Puskar is the founder and curator of New Balkan Cuisine and Iris head chef.
Born 1986. in Prijedor, Bosnia and Herzegovina.
After finishing school, he begins his career in Belgrade.
Participated on the project “Modern Serbian Food” and is one of the Founders of the “Chefs Club Belgrade”.
His food philosophy is based on local ingredients and modern culinary techniques.
Supports and promotes local producers with which he shares the vision.
When you know the producers of your ingredients you are in the position to transfer the energy and love of them over the plate to the final customer.
2016. he started the project “New Balkan Cuisine”.
Iris is the atelier of “New Balkan Cuisine”.
